French Onion Soup

Easy soup to make but make sure your onions are sweet.

4 cups water
3 medium sweet onions, quartered
5 beef bouillon cubes
2 Tb. butter

French bread, sliced 3/4 inch thick, toasted
1/2 cup Parmesan cheese, grated
1/4 lb. Mozzarella cheese, sliced

Put water, onions, bouillon and butter into blender.

Cover and process 1 minute.

Pour into 2-quart saucepan.

Bring to boil; reduce heat to medium and simmer 5 minutes.

Pour into soup dishes.

Top each serving with a slice of toasted French bread, sprinkled with grated parmesan cheese and topped with a slice of Mozzarella cheese.

Yield: 5 cups.

NOTE: A Four-Onion Soup variety would be to have 1 yellow onion, 1 red onion, 1 leek (white portion only), and 5 green onions with tops.
You can add a garlic clove and even a teaspoon of Worcestershire sauce and 1/2 teaspoon ground nutmeg.
Swiss cheese can substitute the Mozzarella cheese.
