Clam Stuffed Mushrooms

Appetizers are oh so good, but watch those calories.

2 lb. or about 36 medium mushrooms

1 ( 8 oz.) can minced clams

1/4 cup butter
1 clove garlic, minced

1/2 cup dried bread crumbs
1/3 cup fresh parsley
salt and pepper

Remove stems from mushrooms.

Mince stems.

Place caps, round side down, on rack of boiling pan.

Drain liquid from clams, reserve clam liquid.

In skillet over medium heat melt butter and brush over mushroom caps.

In remaining butter, cook chopped stems, garlic and clam liquid until stems are tender, about 5 minutes.

Stir in clams and remaining ingredients.

Spoon into mushroom caps.

Broil for 8 minutes and serve.

Yields: 16 to 20 servings.
