Quick Buttermilk Biscuits

Very easy to assemble and these biscuits are not so salty. In fact, they are very fluffy and I use them with my Sausage Gravy.

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

1/4 cup shortening

3/4 cup buttermilk

In a bowl, combine the flour, baking powder, baking soda and salt.

Cut in shortening until the mixture resembles coarse crumbs.

Stir in buttermilk; knead dough gently.

Pat out dough to 1/2-inch thickness.

Cut with a 2-1/2 inch biscuit cutter or large mouth water glass.

Place on lightly greased baking sheet.

Bake at 450 degrees for 10-15 minutes or until golden brown.

Yield: 8 to 10 biscuits.

Note: Buttermilk can be substituted with 1 tablespoon lemon juice or vinegar plus enough milk to make 3/4 cup. You also can use plain yogurt in place of the milk but don't forget to add the lemon juice or vinegar. Let mixture stand for 5 minutes.
