Potato Candy

As a little girl, I was allowed to make this candy. Mom would let me have the kitchen all to myself, but I had to clean up, when I was finished.

1 small potato, cooked and mashed OR
left-over mashed potatoes

1 tsp. vanilla

1 to 2 pounds confectionery sugar

peanut butter

Mix the cooled mashed potatoes and vanilla together.

Work in the confectionery sugar, one cup at a time, until the mixture is stiff enough to roll.

Roll out on surface sprinkled with confectionery sugar.

Spread with peanut butter; then roll up like a jelly roll.

Chill and slice.

The candy can be made ahead of time and refrigerated or frozen for future use.

NOTE: A little mashed potato goes a long way. You might want to use 1/2 cup of mashed potatoes at a time and decide if you want to make more.
